Justin Binnie grew up in California and Japan, where seasonal produce and its presentation were paramount. Before working in kitchens, he studied plant biology, which informed an appreciation for natural flavors at their peak. He believes that a proper ending to a great meal is a dessert that is bright, playful, and refreshing, never too heavy or overly sweet. Most recently, he was the opening Pastry Chef for Empellon Midtown, which earned three stars from the New York Times.
